Banana Pancakes

I've been in a 'Use it up, wear it out' kind of mood lately. Before we left for Tennessee, we used up all the canola oil. Monday I started to make pancakes and then remembered we had no oil. So I decided to use a mashed banana instead of oil in my usual recipe.

I tried oatmeal pancakes a couple of weeks ago and while I liked them, the kids weren't crazy about the texture. I wondered if it was also the wheat flour I used, but I'm thinking it was as much a texture dislike as a flavor dislike.

They liked the banana pancakes - at least Alan and Holly did. Julia said my regular ones are better and the banana ones are just okay. I put nuts in mine but left them out of the kids'... I doubt they would have liked them better with nuts.

I'm kind of excited to have found a pancake recipe without oil or butter - other than the butter I put on the griddle -

1 3/4 c. flour, 2 tsp. baking powder, and a pinch of salt - then separately mix a mashed banana, an egg and enough milk to make about 2 cups liquid. Mix together and that's the batter.

I should try toasting the nuts before putting them in the next time I add them as the pancakes cook.
